Lunch on sundays

Once we talked about recipes, I think it was the one for Bigos. At the moment I am too lazy to translate it, but I'd like to share this one with you. Vegan fast au gratin potatoes with mushrooms and tomatoes.


What you need for 2 people:

  • 8 - 10 potatoes
  • 300 g white mushrooms
  • 125 g cherry tomatoes
  • 1 onion
  • 100 g grated vegan cheese
  • 1 cup of soy granulate
  • salt, pepper, paprika, dried sweet marjoram, cayenne, granulated vegetable broth
  • 200 ml soy cream
  • vegetable oil
Take a cup of soy granulate and add salt, pepper, paprika, cayenne and granulated vegetable broth. Add water until the soy granulate is covered completely and heat into microwave for 3 minutes at maximum. Peel the potatoes, cut in halves and slices, let potatoe slices simmer in salty water until almoste done. Peel the white mushrooms and cut into slices as well, cut cherry tomatoes in quarters and slices onion into small pieces.
Heat vegetable oil in a large pan and slightly broil the onion pieces. Add precooked soy granulate and let broil until slightly brown. Add white mushroom slices and tomatoe quarters and let broil for a few minutes until you add the precooked potatoe slices. Let broil a few minutes again until you add the soy cream. Finally add the grated vegan cheese, dried sweet marjoram, salt and pepper. Stir and let boil for at about one minute. That's it. Ready to serve.
